3 1/2 cups mustard or collard greens (about 1/2 pound)

2 cups cabbage, shredded

1 tablespoon olive oil

2 tablespoons minced garlic

1 onion, chopped

1 tablespoon vinegar

Directions

  1. Wash your hands thoroughly with soap and water before preparing the meal.

  2. Rinse the mustard or collard greens under cold running water. Remove the tough stems and tear the leaves into small, bite-sized pieces. Shred the cabbage if not already done.

  3. Bring 3 quarts of water to a boil in a large saucepan over high heat.
