Ingredients
1 can (15 oz) chickpeas, rinsed and drained
½ cucumber, peeled, seeded, and chopped
2 cloves garlic, minced
3 tablespoons fresh lemon juice
2 teaspoons extra-virgin olive oil
2 tablespoons fresh chopped parsley
3 plum tomatoes, chopped
½ small red onion, thinly sliced
1 roasted red pepper, chopped
¼ teaspoon salt
Directions
In a large bowl, combine the rinsed chickpeas, cucumber, garlic, tomatoes, red onion, and roasted red pepper.
