Ingredients
3 tablespoons cornstarch
¾ cup granulated white sugar
1 cup water
¼ cup fresh lemon juice
1 teaspoon lemon zest
2 large eggs, separated
3 ounces cream cheese, softened
1 (9-inch) pie crust, pre-baked
Directions
In a medium saucepan, whisk together the cornstarch, white sugar, lemon zest, and lemon juice until well combined.
Add the water to the saucepan and whisk until smooth and no lumps remain.
Separate the eggs carefully, reserving the egg whites in a clean bowl for later. Add the 2 egg yolks to the saucepan and beat well to incorporate.
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and just begins to simmer, about 8–10 minutes. The custard should coat the back of a spoon and reach 160°F internal temperature to safely cook the eggs.
Remove the saucepan from the heat and let the lemon curd cool slightly, about 5 minutes.
While the curd cools, beat the softened cream cheese in a separate bowl until smooth and creamy.
Fold the cooled lemon curd into the cream cheese until fully blended, creating a smooth filling.
In a clean bowl with clean beaters, whip the reserved egg whites until stiff peaks form, about 3–4 minutes.
Gently fold the whipped egg whites into the lemon-cream cheese mixture in two additions, being careful not to deflate the whites. This creates the light, cloud-like texture.
Pour the lemon cloud filling into the pre-baked pie crust, spreading it evenly.
Refrigerate the pie for at least 1 hour, or until set and well chilled before serving.
Comments
Every ingredient is stocked year-round at any Charlotte chain without a second trip, and the total cost runs about $3.50 per serving—driven mainly by cream cheese and eggs, both reliable bargains at ALDI or Food Lion. The stated 120 minutes is honest for a no-bake or no-chill version, though a chilled pie stretches closer to three hours with refrigeration; budget accordingly for a weeknight. This is a make-ahead dessert that reheats poorly and demands a same-night slice, but the light lemon custard is forgiving and needs no active tending once assembled.
