Ingredients
1 pound boneless and skinless chicken breasts, pounded thin
4 teaspoons cajun seasoning, divided
2 tablespoons all-purpose flour
2 tablespoons oil
2 tablespoons butter
1/2 cup onion, diced
1/2 cup celery, diced
1/2 cup bell pepper, diced
4 cloves garlic, chopped
1 cup chicken broth
1 cup heavy whipping cream
1/2 cup grated parmesan cheese
Salt and black pepper to taste
1 tablespoon fresh parsley, chopped (optional)
2 green onions, thinly sliced (optional)
Directions
Pat the pounded chicken breasts dry and season both sides with 2 teaspoons of cajun seasoning and a pinch of salt and pepper.
In a shallow bowl, combine the flour and remaining 2 teaspoons of cajun seasoning. Lightly dredge each chicken breast in the seasoned flour, shaking off any excess.
Heat the oil in a large skillet over medium-high heat. Once shimmering, carefully place the chicken breasts in the pan and cook for 6-7 minutes per side until golden brown and the internal temperature reaches 165°F. Transfer the cooked chicken to a plate.
In the same skillet, melt the butter over medium heat. Add the diced onion, celery, and bell pepper, sautéing for 3-4 minutes until the vegetables begin to soften.
Stir in the chopped garlic and cook for another 30 seconds until fragrant.
Pour in the chicken broth, scraping the bottom of the pan to deglaze. Bring to a gentle simmer.
Reduce heat to medium-low and slowly stir in the heavy cream until fully combined. Add the grated parmesan cheese and stir until melted and smooth.
Return the cooked chicken to the skillet, nestling it into the sauce. Simmer for 2-3 minutes to heat through and allow flavors to meld. Taste and adjust seasoning with additional salt and pepper as needed.
Plate the chicken and spoon the creamy cajun sauce over the top. Garnish with fresh parsley and sliced green onions if desired. Serve immediately, optionally with rice or pasta on the side.
