6 oz fresh arugula

1 tsp balsamic vinegar

1 tsp Dijon mustard

8 oz fresh mozzarella, sliced into 1/3-inch-thick slices

1 tsp honey

2 tbsp extra virgin olive oil

3 fresh peaches, sliced into 1/2-inch-thick half moons

2 tbsp balsamic glaze

Directions

  1. Slice the peaches along the pit, then cut each half into 1/2-inch-thick half moons. Optionally peel the peach slices for a more refined presentation.

  2. Cut the fresh mozzarella into 1/3-inch-thick slices.

  3. In a small bowl, whisk together the balsamic vinegar, Dijon mustard, honey, and olive oil until well combined. Season to taste with salt and black pepper.

  4. Place the arugula in a large mixing bowl and drizzle the dressing over it. Toss gently until the leaves are lightly coated.

  5. Divide the dressed arugula between two plates, placing it in the center of each.

  6. Arrange the peach slices and mozzarella slices alternately around the outer edge of each plate in a circle.
