3½ pounds seedless watermelon, rind removed and cut into 1-inch cubes

2 tablespoons fresh lime juice

½ cup fresh basil leaves, thinly sliced

Coarse salt to taste

Ground black pepper to taste

4 ounces feta cheese, broken into large pieces

Directions

  1. Prepare the watermelon by removing the rind and cutting the flesh into 1-inch cubes. Place the watermelon cubes in a large serving bowl.

  2. Drizzle the fresh lime juice over the watermelon cubes and gently toss to combine.

  3. Add the thinly sliced basil to the bowl and carefully fold it into the watermelon mixture.

  4. Scatter the feta cheese pieces evenly over the salad.
