Ingredients
2 tablespoons red chile powder
1/4 cup fresh ground coffee
2 tablespoons roasted ground cumin
1 teaspoon kosher salt
1/2 teaspoon fresh cracked black pepper
2 pounds flat iron steak
Directions
In a small bowl, whisk together the red chile powder, fresh ground coffee, roasted cumin, kosher salt, and black pepper until evenly combined.
Pat the flat iron steak dry with paper towels and place on a cutting board.
Generously coat both sides of the steak with the spice rub, pressing gently to help the mixture adhere to the meat.
Wrap the rubbed steak in plastic wrap and refrigerate for at least 2 hours (or up to 48 hours) to allow the flavors to penetrate the meat.
Remove the steak from the refrigerator 30 minutes before cooking to bring it closer to room temperature.
Heat a cast-iron skillet or heavy-bottomed pan over high heat until it is very hot.
Place the steak in the hot pan and sear for 4–5 minutes on the first side without moving it, until a dark crust forms.
Flip the steak and sear the other side for 4–5 minutes until it reaches an internal temperature of 145°F for medium-rare doneness.
Transfer the cooked steak to a clean cutting board and let it rest for 5 minutes before slicing.
Slice the steak against the grain and serve immediately.
