Ingredients

1 lb ground beef

8 oz whole grain rotini pasta

1 can (10¾ oz) tomato soup

1 cup salsa

½ cup milk

1 cup shredded cheddar cheese, divided

Sour cream, for serving (optional)

Tortilla chips, for serving (optional)

Directions

  1. In a large skillet over medium-high heat, cook the ground beef, breaking it apart with a spoon, until it is no longer pink and reaches an internal temperature of 160°F (about 8 minutes). Drain off any excess fat and set aside.

  2. While the beef cooks, bring a large pot of salted water to a boil and cook the rotini pasta according to package directions until al dente. Drain well and set aside.

  3. Return the cooked beef to the skillet over medium heat. Add the drained rotini, tomato soup, salsa, milk, and ½ cup of the shredded cheddar cheese. Stir until all ingredients are evenly combined.

  4. Continue cooking over medium heat, stirring occasionally, until the mixture is heated through and the cheese is melted, about 5 minutes.

  5. Sprinkle the remaining ½ cup of cheddar cheese over the top of the skillet and stir gently to combine.

  6. Transfer to serving bowls and top with sour cream and tortilla chips if desired. Serve immediately.
