A vibrant Southeast Asian-inspired dressing that combines the bright, citrusy notes of fresh lime juice with the distinctive aromatic flavor of lemongrass. Garlic and white pepper add depth and warmth, while a touch of coconut sugar balances the acidity. Fish sauce rounds out the umami flavors, creating a complex and delicious condiment perfect for dressing salads, noodle dishes, or grilled proteins.

Ingredients

2 garlic cloves, peeled and crushed

1 stalk fresh lemongrass, woody outer layers removed, finely chopped

¼ tsp ground white pepper

2 Tbsp coconut sugar

3 Tbsp fresh lime juice

1 Tbsp fish sauce

Directions

  1. In a small mixing bowl, combine the crushed garlic, finely chopped lemongrass, and ground white pepper.

  2. Add the coconut sugar to the bowl and stir well to dissolve it and distribute the ingredients evenly.

  3. Pour in the fresh lime juice and fish sauce, stirring thoroughly until all components are well combined.

  4. Taste and adjust seasonings as desired—add more lime juice for brightness, more fish sauce for depth, or more sugar for sweetness.

  5. Let the dressing rest for at least 5 minutes to allow the flavors to meld together before serving.
