1 package Pillsbury French bread

2 cups shredded cheddar cheese

1 cup prepared and seasoned taco meat

1 cup pizza sauce

Shredded lettuce, for topping

Thinly sliced onion, for topping

Thinly sliced peppers, for topping

Thinly sliced shallot, for topping

Diced tomatoes, for topping

Salsa, any kind, for topping

Sour cream, to taste

Directions

  1. Preheat your oven to 375°F (190°C). Remove the Pillsbury French bread dough from its package and let it rest at room temperature for about 2 minutes.

  2. Place the unrolled bread dough on a cutting board. Without rolling it out further, use a sharp knife to carefully slice off rounds approximately ½ inch thick, as if you were slicing cookie dough. You should be able to obtain 18 to 24 rounds.

  3. Spray two standard muffin tins generously with non-stick cooking spray. Gently press one dough round into each muffin cup, using the palm of your hand to flatten it slightly against the bottom and sides of the cup.

  4. Spoon a small amount of pizza sauce into each dough cup, distributing evenly. Sprinkle the shredded cheddar cheese over the sauce, then add a spoonful of the seasoned taco meat to the center of each cup.

  5. Bake in the preheated oven for 8 to 10 minutes, until the dough is golden and cooked through. The internal dough temperature should reach 160°F (71°C).

  6. Remove the baked pizza bites from the oven and let cool for 1 minute. Carefully use a small spoon to help loosen each bite from its muffin cup, then transfer to a serving platter.

  7. Top each mini pizza bite with your choice of fresh toppings: shredded lettuce, sliced onion, sliced peppers, sliced shallot, diced tomatoes, salsa, and sour cream. Serve warm and enjoy!
