Ingredients

2 avocados

½ small red onion

1 bunch cilantro, finely chopped

1 teaspoon lime juice

1 teaspoon salt

1½ lb. ground beef

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon cayenne pepper

1 chipotle pepper in adobo sauce, finely chopped

1 onion, chopped

2 eggs, beaten

¾ cup finely crushed tortilla chips

6-8 slices cheddar cheese

6-8 burger buns

Directions

  1. Prepare the guacamole: Cut the avocados in half lengthwise and remove the pit. Scoop the flesh into a small bowl and mash with a fork until mostly smooth, leaving some small chunks for texture. Finely dice the red onion and cilantro. Fold the red onion, cilantro, lime juice, and salt into the mashed avocado until evenly combined. Cover with plastic wrap, pressing it directly onto the surface, and refrigerate until ready to serve (up to 12 hours ahead).

  2. Combine the beef base: Place the ground beef in a large mixing bowl and gently break it up with your hands.

  3. Add the dry seasonings and fresh ingredients: Sprinkle the cumin, chili powder, cayenne pepper, and salt over the beef. Finely chop the onion and chipotle pepper, then add both to the bowl.

  4. Mix the beef thoroughly: Using your hands, combine all ingredients until evenly distributed, being careful not to overwork the meat.

  5. Add the binder and crunch: Pour in the beaten eggs and crushed tortilla chips. Using your hands, mix gently but thoroughly until everything is incorporated. Form the mixture into 6 to 8 patties, each about 1½ inches thick. Handle the meat as little as possible to keep the burgers tender.

  6. Cook the burgers: Heat a nonstick skillet over medium heat. Working in batches, cook 2-3 patties at a time depending on pan size. Cover the pan with a lid and cook for 5 minutes, peeking once or twice to ensure the bottoms brown evenly without burning. After 5 minutes, flip the burgers and cook uncovered for 2-3 minutes more until browned to your preference. During the final minutes of cooking, place one slice of cheddar on top of each patty and allow it to melt slightly in the residual heat. Cook ground beef burgers to an internal temperature of 160°F.

  7. Toast the buns: Place the burger buns on a baking sheet and slide them under a preheated broiler for 3-4 minutes until lightly golden and crispy. Watch carefully to avoid burning.

  8. Assemble and serve: Place each finished burger on a toasted bun and top with a generous dollop of chilled guacamole. Serve immediately and enjoy.
