Ingredients
1 part-skim mozzarella cheese stick
4 cherry tomatoes
8 fresh basil leaves
1 teaspoon olive oil
1 teaspoon balsamic vinegar
4 toothpicks
Directions
Wash your hands thoroughly with soap and warm water.
Rinse the cherry tomatoes and pat them dry. Gently rinse the basil leaves and pat dry as well.
Cut the mozzarella cheese stick into 4 equal pieces, each about 1 inch long.
Thread each toothpick with one piece of cheese, followed by one cherry tomato. Slide the toothpick back through the tomato and out the other side, then thread it through 2 basil leaves before removing.
Arrange the completed skewers on a serving platter.
Drizzle the olive oil evenly over all the skewers, then drizzle the balsamic vinegar over them as well.
Serve immediately while the cheese is cool and fresh.
