Ingredients
4 medium onions, sliced
5 lb beef brisket, trimmed of fat
1 1/4 cups barbecue sauce
2 cans (15 oz each) cannellini beans, rinsed and drained
2 tbsp fresh rosemary, chopped
Directions
Place the trimmed beef brisket in a large cooking vessel and sear it over medium-high heat for 3-4 minutes per side until browned, then remove and set aside.
In the same vessel, add the sliced onions and cook for 5-6 minutes until they begin to soften and caramelize, stirring occasionally.
Return the seared brisket to the vessel and pour the barbecue sauce evenly over the meat and onions.
Add the rinsed and drained cannellini beans around the brisket, then sprinkle the chopped fresh rosemary over the entire dish.
Cover and cook on high heat, bringing the mixture to a boil, then reduce to medium and simmer for 12-15 minutes until the beef reaches an internal temperature of 145°F when measured at the thickest point with a meat thermometer.
Remove from heat, let rest for 2 minutes, then slice the brisket and serve with the beans, onions, and sauce.
