Ingredients

4 cups Fresh or frozen sweet peas

½ medium onion Spanish red onion, peeled and chopped

3 tablespoons Extra virgin olive oil

to taste Sea salt

to taste Black pepper

Directions

  1. Heat the extra virgin olive oil in a large skillet over medium-low heat. Add the chopped Spanish red onion and cook gently for 6–8 minutes, stirring occasionally, until the onion becomes soft and lightly caramelized.

  2. Increase the heat to medium and add the sweet peas to the skillet. Stir well to combine with the onion and olive oil.

  3. Sauté the peas and onion together for 4–5 minutes, stirring gently, until the peas are heated through and tender. If using fresh peas, cook until they are bright green and cooked through.

  4. Remove from heat and season to taste with sea salt and fresh black pepper. Serve warm or at room temperature.
