Ingredients

3 Large eggs

¼ tsp Kosher salt

⅛ tsp Freshly ground black pepper

1½ tbsp Extra virgin olive oil

1 Persian cucumber, diced

1 Large tomato, seeded and diced

¼ medium Red onion, diced

1 tbsp Fresh lemon juice

½ cup Crumbled feta cheese

2 tsp Za'atar seasoning

Fresh herbs (cilantro, flat-leaf parsley, dill, or mint), finely chopped, optional

Directions

  1. Prepare the vegetable filling by combining the diced cucumber, diced tomato, diced red onion, and fresh lemon juice in a small bowl. Season with a pinch of kosher salt and freshly ground black pepper. Set aside and let the flavors meld for a few minutes.

  2. In a separate bowl, whisk together the 3 large eggs with 1/4 teaspoon kosher salt and 1/8 teaspoon freshly ground black pepper until well combined and light.

  3. Heat 1.5 tablespoons of extra virgin olive oil in a large nonstick skillet over medium-high heat. Once the oil is shimmering, pour in the whisked eggs and let them cook undisturbed for about 30 seconds until they just begin to set on the bottom.

  4. Using a rubber spatula, gently push the cooked eggs toward the center of the skillet while tilting the pan to allow uncooked egg to flow to the edges. Continue cooking for another 2-3 minutes until the top surface is mostly set but still slightly moist, reaching an internal temperature of 160°F.

  5. Sprinkle the za'atar seasoning evenly over the cooked omelet, then scatter the crumbled feta cheese across the surface.

  6. Spoon the prepared vegetable mixture onto one half of the omelet, leaving a small border around the edges. Sprinkle with fresh chopped herbs if desired.

  7. Fold the omelet in half over the filling, then carefully slide it onto a serving plate. If desired, slice into roll-ups or wedges and serve immediately while warm.
