A classic Nordic cucumber salad with a sweet and tangy vinegar dressing. Thin slices of fresh cucumber are marinated in a simple mixture of white vinegar and sugar, seasoned delicately with white pepper. This refreshing, bright side dish is perfect alongside rich main courses and is prepared with minimal effort. The cucumbers soften slightly as they absorb the pickling liquid, creating a tender, flavorful salad that gets better with time.

Ingredients

2 cups Cucumbers, peeled and thinly sliced

½ cup White vinegar

½ cup Sugar

Ground white pepper

Directions

  1. Peel the cucumbers and slice them very thinly using a sharp knife or mandoline slicer. Place the sliced cucumbers in a large glass bowl.

  2. In a small bowl, combine the white vinegar and sugar, stirring until the sugar dissolves completely.

  3. Pour the vinegar-sugar mixture over the sliced cucumbers, stirring gently to coat all the slices evenly.

  4. Season the salad with ground white pepper to taste, stirring carefully to distribute the seasoning throughout.

  5. Cover the bowl and refrigerate for at least 1 hour before serving. The salad tastes best after 2–3 hours as the flavors meld and the cucumbers soften. Stir occasionally during marinating. Serve chilled.
