Ingredients

1 pound dried lima beans

1½ pounds cottage ham, diced

2 large onions, diced

8 cups water for cooking beans

6 cups water for soup

½ teaspoon Maggi Seasoning

Salt to taste

Black pepper to taste

Directions

  1. Rinse the dried lima beans under cold running water and remove any debris. Place them in a large pot and cover with 8 cups of water. Bring to a boil over high heat, then reduce to a simmer. Cook uncovered for 45 to 50 minutes until the beans are tender but still hold their shape. Drain and set aside.

  2. In a separate large pot or Dutch oven, combine the diced cottage ham and diced onions. Cook over medium heat, stirring occasionally, for about 5 minutes until the onions begin to soften and release their moisture.

  3. Pour in the 6 cups of fresh water and bring the mixture to a simmer over medium heat.

  4. Add the cooked lima beans to the ham and broth, stirring gently to combine.

  5. Stir in the Maggi Seasoning, then taste the soup and add salt and black pepper as needed. Simmer gently over medium-low heat for 10 to 15 minutes to allow the flavors to meld and the beans to warm through completely.

  6. Ladle the soup into bowls and serve hot. Adjust seasoning with additional salt and pepper if desired.
