Ingredients

74 gm Firm tofu

150 gm Ground pork

1 Large egg

1 tsp Light soy sauce

1 tsp Fish sauce

2 tsp Sugar

2 tsp Corn starch

3 Tbsp Water

to taste Salt

to taste White pepper

Shredded carrots

Shredded iceberg lettuce

Directions

  1. Pat the tofu dry thoroughly using paper towels or a clean kitchen cloth. This helps the mixture bind better.

  2. Crumble the dried tofu into small pieces and place in a large mixing bowl.

  3. Add the ground pork and egg to the bowl with the tofu.

  4. In a small cup, combine the soy sauce, fish sauce, sugar, corn starch, and water, stirring until the corn starch dissolves.

  5. Pour the marinade into the pork and tofu mixture. Add salt and white pepper to taste.

  6. Mix all ingredients together thoroughly using your hands or a spoon until well combined and the mixture holds together.

  7. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to firm up.

  8. Heat a non-stick skillet or frying pan over medium-high heat with a light coating of oil (about 1-2 Tbsp).

  9. Divide the chilled mixture into 8 equal portions and form each into a flat, compact patty about 1/2 inch thick.

  10. Place the patties in the hot pan, working in batches if needed to avoid crowding. Fry for 4-5 minutes on the first side until golden brown.

  11. Flip the patties carefully and cook the other side for 3-4 minutes until golden and cooked through. The internal temperature should reach 160°F (71°C) for food safety.

  12. Transfer cooked patties to a plate lined with paper towels to remove excess oil.

  13. Serve the patties warm with fresh shredded lettuce and carrots on the side or as a bed underneath.
