Ingredients
2 whole chicken legs
1 teaspoon whole-grain mustard
1 teaspoon honey
1/2 lemon
2 tablespoons olive oil
Salt to taste
Black pepper to taste
Directions
Preheat your oven to 425°F (220°C). Pat the chicken legs dry with paper towels and season generously with salt and black pepper on both sides.
In a small bowl, whisk together the whole-grain mustard and honey until well combined.
Heat the olive oil in a large oven-safe skillet over medium-high heat until shimmering. Carefully place the chicken legs skin-side down and sear for 4–5 minutes until the skin is golden and crispy.
Flip the chicken legs and brush the honey-mustard mixture generously over the top of each leg. Squeeze the lemon juice over the chicken.
Transfer the skillet to the preheated oven and roast for 25–30 minutes, until the chicken reaches an internal temperature of 165°F at the thickest part of the thigh, and the glaze is caramelized and bubbling.
Remove from the oven and let rest for 2–3 minutes. Serve immediately, spooning any pan juices over the chicken legs.
