1 pound shishito peppers

2 tablespoons Asian dark sesame oil

Coarse sea salt to taste

Directions

  1. Preheat your grill to medium-high heat, about 400–450°F. Pat the shishito peppers dry with paper towels to remove any surface moisture, which helps them blister properly.

  2. Lightly brush or coat the shishito peppers with a thin layer of sesame oil. This prevents sticking and promotes even charring.

  3. Place the peppers directly on the grill grate in a single layer. Allow them to sit undisturbed for 2–3 minutes until they develop dark, charred blisters on one side.

  4. Turn the peppers with tongs and grill the other side for another 2–3 minutes, continuing until the peppers are blistered and softened but still holding their shape, about 5–6 minutes total.

  5. Transfer the grilled peppers to a serving platter. Drizzle generously with the remaining dark sesame oil and sprinkle with coarse sea salt to taste. Serve immediately while still warm.
