1 cup Kosher salt
⅓ cup Dried Sichuan peppercorns
1 tbsp Five-spice powder
Directions
Place the dried Sichuan peppercorns in a dry skillet over medium heat. Toast for 2–3 minutes, stirring frequently, until fragrant and the color deepens slightly. Be careful not to burn them. Transfer to a small plate to cool.
Once cooled, use a mortar and pestle to gently crush the toasted Sichuan peppercorns into coarse pieces. Do not grind them too finely—you want some texture.
Combine the crushed Sichuan peppercorns, kosher salt, and five-spice powder in a small bowl. Stir well to distribute the spices evenly throughout the salt.
Taste and adjust if needed, adding a bit more five-spice powder if you prefer a warmer flavor, or more salt if you want less spice intensity. Store in an airtight container for up to 2 months.
