2 bay leaves
1/4 cup butter
1 1/3 cups chopped carrots
1 1/3 cups chopped celery
2 (14.5 oz) cans low-sodium chicken broth
2 cups dry medium egg noodles
1/3 cup all-purpose flour
3 Tbsp chopped fresh parsley
3 cloves garlic, minced
1/3 cup heavy cream
2 1/2 cups milk
1 1/2 Tbsp olive oil

1 lb boneless skinless chicken breasts

Directions
Cook the egg noodles according to package directions; they should be done around the same time the soup is nearly finished. Drain and set aside. In a large pot, heat the olive oil over medium heat.
Add the chopped onion, carrots, and celery to the pot and sauté until softened, about 3 to 4 minutes. Stir in the minced garlic and cook for another minute.
Pour in the chicken broth and add the parsley and bay leaves. Season with salt and black pepper to taste.
Place the chicken breasts into the broth (slice thicker breasts in half through their thickness for even cooking). Bring the soup to a boil over medium-high heat, then reduce heat to medium, cover with a lid, and simmer until the chicken is cooked through to an internal temperature of 165°F, about 10 to 15 minutes depending on thickness.
Remove the chicken from the pot and let it rest for 5 minutes. Shred it into bite-sized pieces using two forks or a sharp knife. In a separate medium saucepan, melt the butter over medium heat, add the flour, and stir constantly for about 1 1/2 minutes. Slowly whisk in the milk while stirring vigorously to avoid lumps.
