Ingredients
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup plus 2 tablespoons light brown sugar
1/4 cup plus 2 tablespoons granulated sugar
1/2 cup creamy peanut butter
1 large egg
2 1/2 tablespoons milk
1/2 teaspoon vanilla extract
A few drops brown food coloring
2 1/2 tablespoons vodka
Jelly (flavor of your choice) for filling
Directions
In a large bowl or the bowl of an electric mixer, beat together the creamy peanut butter, light brown sugar, and granulated sugar until the mixture becomes light and fluffy, approximately 2 to 3 minutes.
Add the egg, milk, and vanilla extract to the peanut butter mixture and beat until well combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and baking soda to combine evenly.
With the mixer on low speed, gradually add the flour mixture to the peanut butter mixture and beat just until the dough comes together without overmixing.
Divide the dough in half and shape each half into a rectangular block. Using your fingertips, create gentle indentations along the middle and along the two long sides of each block to mimic the appearance of a bread loaf.
Wrap each dough block tightly in plastic wrap and refrigerate for at least 1 hour, or overnight, until the dough is firm and chilled.
Preheat your oven to 350 degrees Fahrenheit. Unwrap the chilled dough and using a sharp knife, slice the blocks into 1/4-inch thick slices to resemble bread slices.
Place the cookie slices on parchment paper or silicone baking mats, spacing them about 1 inch apart, and bake for 7 to 9 minutes, until the edges just begin to turn golden brown.
Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
To create a bread-crust effect, combine the vodka and brown food coloring in a small bowl. Using a clean paintbrush, carefully brush the vodka-coloring mixture onto the edges and sides of all the cooled cookies. The vodka will evaporate quickly and prevent the cookies from becoming soggy.
To assemble the cookie sandwiches, select one cookie slice and spread the top surface with a thin layer of jelly. Match it with another cookie slice of similar size, and press them together gently to form a sandwich. Repeat with remaining cookies.
