Ingredients

175 grams unseasoned rice vinegar

120 grams granulated sugar

17 grams salt

Directions

  1. Place a clean mixing bowl or plastic squeeze bottle on a scale. Carefully measure in 175 grams of unseasoned rice vinegar, 120 grams of granulated sugar, and 17 grams of salt.

  2. If using a squeeze bottle, seal the cap tightly and shake vigorously for several minutes until all the sugar and salt crystals have completely dissolved. If using a bowl, stir the mixture continuously with chopsticks or a whisk until the sugar and salt are fully dissolved and the liquid is clear.

  3. Once mixed, transfer the seasoned vinegar to a non-reactive airtight container (glass or plastic both work well). Store in a cool, dry place away from direct sunlight. The sushi vinegar will keep for several months and is ready to use whenever you prepare sushi rice.
