Spicy Pork and Mustard Green Soup

Ingredients
½ pound ground pork
2 cloves garlic, finely chopped
2 teaspoons finely grated fresh ginger
1 teaspoon crushed Sichuan peppercorns
¾ teaspoon crushed red pepper flakes
½ teaspoon cumin seeds, coarsely chopped
1 tablespoon vegetable oil
Kosher salt to taste
Freshly ground black pepper to taste
4 cups low-sodium chicken broth
1 bunch mustard greens, torn (about 4 cups)
4 scallions, thinly sliced
2 tablespoons reduced-sodium soy sauce
1 teaspoon fish sauce
8 ounces wide rice noodles
Directions
In a medium bowl, combine the ground pork, chopped garlic, grated ginger, crushed Sichuan peppercorns, red pepper flakes, and chopped cumin seeds. Mix well to distribute the seasonings evenly throughout the pork.
Heat the vegetable oil in a large pot over medium heat. Add the seasoned pork mixture to the pot and cook, stirring frequently and breaking the meat apart with a spoon, until the pork is browned and cooked through (165°F internal temperature), about 8–10 minutes. Season with salt and black pepper to taste.
Pour the chicken broth into the pot and bring to a boil over medium-high heat. Reduce the heat to low and simmer for 8–10 minutes to allow the flavors to meld together.
Add the torn mustard greens, sliced scallions, soy sauce, and fish sauce to the pot. Stir occasionally and continue cooking until the mustard greens become tender, about 5–8 minutes. Taste and adjust the seasoning with additional salt and black pepper as needed.
While the soup is simmering, cook the rice noodles according to the package directions in a separate pot. Drain the cooked noodles well.
Divide the cooked noodles evenly among four bowls. Carefully ladle the hot soup with pork and greens over the noodles in each bowl. Serve immediately.
