Ingredients
8 oz cream cheese, softened
⅓ cup sugar, divided
1 large large egg
1 cup mini chocolate chips
2 cup pumpkin purée
3 large large eggs
⅔ cup melted coconut oil
3 tbsp milk or cream
1 tsp pure vanilla extract
3½ cup all-purpose flour
1 tbsp pumpkin pie spice
2 tsp baking soda
1 tsp baking powder
½ tsp salt
Directions
In a medium bowl, combine the softened cream cheese, 1/3 cup sugar, and 1 large egg. Beat until smooth and well combined. Fold in the mini chocolate chips until evenly distributed. Place the bowl in the freezer for 5–10 minutes while you prepare the baking pans.
Preheat the oven to 350°F. Line two 24-cup mini-muffin tins with paper liners (you may have a few extra liners; remove and save them for later use).
Line a baking sheet with waxed paper. Remove the cream cheese mixture from the freezer and scoop into small balls (about the size of a marble). Place the balls on the prepared baking sheet and freeze for 30 minutes or until firm.
In a medium bowl, whisk together the pumpkin purée, 3 large eggs, melted coconut oil, milk or cream, and vanilla extract until thoroughly blended.
In a large bowl, whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt.
Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix. The batter should be lumpy.
Scoop the batter into the prepared mini-muffin cups, filling each about two-thirds full.
Remove the frozen cream cheese balls from the freezer and gently press one into the center of each muffin cup, allowing the batter to rise around the sides.
Bake for 15–18 minutes, until a toothpick inserted into the pumpkin batter (not through the cream cheese) comes out almost clean with just a few moist crumbs.
Allow the muffins to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
To store, place cooled muffins in an airtight container or freezer bag and freeze for up to 3 months. Thaw on the counter overnight before serving.
Comments
Cream cheese, chocolate chips, pumpkin, and standard baking staples are all stocked at Harris Teeter, Food Lion, Walmart, ALDI, and Kroger—no special trips needed. The stated 75 minutes is honest: you're looking at roughly 15 minutes of prep (mixing two batters, filling tins) plus 50-60 minutes of baking and cooling. Cost per muffin lands around 35-45 cents when cream cheese and chocolate chips are on sale, making this genuinely cheap for 44 servings. These reheat well in the microwave or toaster oven for a quick breakfast or lunchbox addition, and the recipe scales down easily if you don't need 44 muffins. The one caveat: pumpkin peak is September through November, so outside that window you're buying shelf-stable canned pumpkin at a slight premium and the seasonal appeal fades.
