Ingredients

4 to 6 flour tortillas

2 cans black beans, rinsed and drained

1 teaspoon chili powder

1 teaspoon ground cumin

¼ teaspoon cayenne pepper, or more to taste

2 tablespoons olive oil, plus more for brushing

Salt to taste

½ cup packed fresh cilantro leaves

3 cloves garlic, peeled

2 cups shredded romaine or green lettuce

3 to 4 medium tomatoes, diced

1 medium ripe avocado, cubed

Directions

  1. Preheat your broiler to high heat. While it heats, combine the rinsed black beans, chili powder, ground cumin, and cayenne pepper in a food processor or blender. Pulse and blend until the mixture becomes chunky-smooth, adding 1 tablespoon of olive oil (or water) at a time as needed to help the mixture blend. You want some texture remaining—do not over-blend into a completely smooth paste. Season with salt to taste.

  2. Prepare the cilantro sauce by combining the fresh cilantro leaves, garlic cloves, and a pinch of salt in a clean food processor or blender. Pulse until finely chopped and well combined. Add the remaining olive oil a bit at a time, pulsing until you reach a sauce consistency. Taste and adjust the salt or cilantro as desired.

  3. Arrange the flour tortillas directly on the broiler rack, making sure the edges rest on the rack so they remain flat and do not bend through the openings. Broil for 3 to 5 minutes until the edges begin to brown and the surface starts to crisp. Carefully flip each tortilla and broil the other side for another 3 to 5 minutes until golden brown and crispy throughout.

  4. Remove the crispy tortillas from the broiler and let them cool for 1 to 2 minutes. Spread a generous layer of the black bean mixture onto each tostada. Top with diced tomatoes, shredded lettuce, and cubed avocado. Drizzle the cilantro sauce over the top and serve immediately.

All ingredients are standard stock at every Charlotte chain, with black beans, cilantro, and avocados reliably available even outside peak season at Harris Teeter, Food Lion, or Kroger. Cost per serving runs roughly $2.50–$3.00 because black beans are cheap protein and you're building on budget staples, though avocado price swings with season; a cilantro sauce calls for fresh herbs and the stated 45 minutes is honest if you account for browning tortillas and prepping the sauce, though the actual assembly is quick. This is a low-fuss weeknight dish that doesn't demand constant attention and reheats adequately if wrapped loosely, though crispy tostadas soften after a day. The recipe lands naturally in North Carolina without stretching—black beans are accessible year-round and work well alongside Southern tastes, but it's not regional enough to feel locally rooted the way a shrimp or collard dish would.
