Ingredients

4 tablespoons (½ stick) unsalted butter

1 salmon fillet (2 to 3 pounds), skin on if desired

Salt and freshly ground black pepper to taste

2 tablespoons chopped fresh parsley leaves

Directions

  1. Preheat your oven to 400°F. Pat the salmon fillet dry with paper towels and place it skin-side down on a rimmed baking sheet.

  2. Season the salmon generously with salt and freshly ground black pepper on both sides.

  3. Cut the butter into small pieces and scatter them evenly over the top of the salmon fillet.

  4. Roast the salmon in the preheated oven for 12 to 15 minutes, until the flesh is opaque and flakes easily with a fork when tested at the thickest point, reaching an internal temperature of 145°F.

  5. Remove the salmon from the oven and transfer it to a serving platter. Spoon any melted butter and pan juices over the fillet.

  6. Garnish the salmon with fresh chopped parsley and serve immediately.
