Ingredients

2 Large eggs

1 cup All-purpose flour

¼ cup Picholine olive oil

¼ tsp Salt

1 cup Semisweet chocolate chips

¾ cup Granulated sugar

1 tsp Vanilla extract

½ cup Walnut pieces

½ cup White chocolate chips

Directions

  1. Preheat your oven to 350°F. Line an 8x8 inch baking pan with aluminum foil for easy removal. In a microwave-safe bowl, melt the semisweet chocolate chips in 1-minute intervals, stirring halfway through, until completely melted and smooth.

  2. Stir the olive oil into the melted chocolate until well combined. Add the sugar and vanilla extract, stirring to incorporate. Beat in the eggs one at a time, stirring after each addition. The batter will thicken as you mix.

  3. Sprinkle the flour and salt over the batter and fold together gently. Stir in the walnut pieces and white chocolate chips until just combined—do not overmix.

  4. Spread the batter evenly into the prepared foil-lined pan. Bake for 30–32 minutes, until the edges are set and a toothpick inserted in the center comes out with just a few moist crumbs (indicating fudgy doneness). Allow the brownies to cool in the pan for 5 minutes, then lift out using the foil and transfer to a wire rack to cool completely. Once cool, slice into 16 squares and serve.
