Ingredients

2 tbsp toasted sesame oil

6 skinless and boneless chicken thighs, sliced

2 large garlic cloves, crushed

1 thumb-sized piece of fresh ginger, grated

50g runny honey

30ml light soy sauce

1 tbsp rice wine vinegar

100ml water

1 tbsp sesame seeds, to serve

4 spring onions, shredded

Sticky rice, to serve

Steamed bok choi or spring greens, to serve

Directions

  1. Heat the sesame oil in a large non-stick skillet over medium heat. Add the sliced chicken thighs and cook for about 7 minutes, stirring occasionally, until they turn golden brown on all sides.

  2. Add the crushed garlic and grated ginger to the pan and stir continuously for 2 minutes until fragrant.

  3. Pour in the honey, soy sauce, rice wine vinegar, and water. Stir well to combine all ingredients evenly.

  4. Bring the sauce to a boil, then reduce to a medium heat and simmer for 2 to 5 minutes, stirring occasionally, until the chicken is coated in a thick, sticky glaze and the internal temperature reaches 165°F.

  5. Transfer the teriyaki chicken to a serving platter. Scatter the shredded spring onions and sesame seeds over the top.

  6. Serve the chicken alongside sticky rice and steamed bok choi or spring greens.
