Ingredients
4 salmon filets, skin on (1/2 pound each)
2 tablespoons olive oil
Salt, to taste
1/2 cup honey
2 teaspoons harissa
Directions
Preheat your oven to 400°F. Pat the salmon filets dry with paper towels and season both sides generously with salt.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Once shimmering, place the salmon skin-side down in the pan and sear for 3–4 minutes, until the skin is crispy and golden brown. Do not move the fish during this time.
In a small bowl, whisk together the honey and harissa until well combined, creating a smooth glaze.
Carefully brush the harissa-honey glaze over the top side of each salmon filet, distributing it evenly.
Transfer the skillet to the preheated oven and roast for 8–10 minutes, until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F at the thickest part.
Remove the skillet from the oven and let the salmon rest for 2 minutes. Serve immediately, spooning any pan juices over the filets.
