Feta Zucchini Bites

Ingredients
1 medium zucchini, roughly 1 lb
¼ teaspoon salt, plus more for sweating zucchini
1 cup cooked navy beans
1-2 tablespoons water or reserved bean liquid
2 ounces feta cheese, crumbled
1 tablespoon fresh parsley, finely chopped
1 teaspoon oil
Directions
Slice the zucchini lengthwise into long, ¼-inch thick slabs, creating flat pieces suitable for rolling.
Arrange the zucchini slices on a large plate or cutting board and lightly season with salt. Allow them to sit undisturbed for 15 minutes so they release their moisture.
While the zucchini rests, add the cooked navy beans to a food processor and blend until smooth, adding water or reserved bean liquid one tablespoon at a time as needed to reach a spreadable consistency.
To the bean mixture, add the crumbled feta cheese, chopped fresh parsley, and ¼ teaspoon salt. Pulse the processor a few times until the filling is well combined and uniform. Transfer to a bowl and set aside.
Pat each zucchini slice thoroughly dry using paper towels to remove excess moisture.
Heat the oil in a large nonstick skillet or grill pan over medium heat. Working in batches if needed, grill the zucchini slices for 2 to 3 minutes per side until they develop light golden grill marks and begin to soften.
Remove the grilled zucchini slices from the pan and place them on a clean plate or paper towels to cool slightly.
Spread approximately 1 tablespoon of the bean and feta filling evenly over the top surface of each cooked zucchini slice.
Starting from one short end, gently roll up each filled zucchini slice into a compact cylinder. The filling should hold the roll closed.
Serve the zucchini bites immediately at room temperature, or refrigerate them and serve chilled.
