⅓ cup Extra virgin olive oil
1 cup White wine vinegar
1 Lemon zest and juice
1 tsp Kosher salt
1 tsp Black pepper
1 Tbsp Greek seasoning
2 lbs Chicken tenders
4 cups Romaine lettuce, chopped
1½ cups Tomatoes, chopped into chunks
1½ cups Cucumber, chopped into chunks
¼ cup Red onion, finely chopped
¾ cup Kalamata olives, pitted
Directions
Prepare the Greek dressing by combining the extra virgin olive oil, white wine vinegar, lemon zest, lemon juice, kosher salt, black pepper, and Greek seasoning in a large measuring cup. Stir well until thoroughly mixed and the seasoning is fully dissolved.
Place all chicken tenders in a large zip-top bag and pour half of the prepared dressing over them. Seal the bag and refrigerate for 15 minutes, shaking occasionally to ensure even coating.
Remove the marinated chicken from the refrigerator and thread 1 to 2 chicken tenders onto metal or wooden skewers, dividing the chicken evenly among the skewers.
Heat an outdoor grill or indoor grill pan over medium-high heat. Grill the chicken skewers for approximately 5 minutes on each side, until the chicken reaches an internal temperature of 165°F. Avoid excessive charring and cook until the chicken is opaque throughout.
