Ingredients
2 1/4 cups oat bran
1/4 cup brown sugar, firmly packed
1 1/2 teaspoons ground cinnamon
1 tablespoon baking powder
1 large egg
1/2 cup fresh orange juice
3/4 cup non-fat skim milk
2 tablespoons canola oil
3/4 cup unsweetened applesauce
1 medium banana, mashed
2 tablespoons raisins or other dried fruit
Directions
Wash your hands thoroughly with soap and water before beginning.
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the oat bran, brown sugar, ground cinnamon, and baking powder. Stir until evenly blended.
In a separate bowl, crack the egg and whisk together with the orange juice, skim milk, and canola oil until well combined.
In a small bowl, mash the banana and stir in the unsweetened applesauce and raisins until evenly mixed.
Add the fruit mixture to the dry ingredients and fold together gently.
Pour the wet ingredients into the dry ingredients and stir just until the batter comes together and is evenly moistened. Do not overmix.
Coat a standard 12-cup muffin tin with non-stick cooking spray.
Divide the batter evenly among the muffin cups, filling each about three-quarters full.
Bake in the preheated oven for 15 to 17 minutes, until a toothpick inserted into the center of a muffin comes out clean or with just a few moist crumbs.
Let the muffins cool in the pan for 10 minutes, then carefully turn them out onto a wire cooling rack.
Allow the muffins to cool completely on the rack. Once cooled, place them in an airtight container and freeze for up to one month if desired.
