Ingredients

1 tablespoon vegetable oil

1 medium onion, peeled and chopped

2 cloves garlic, peeled and minced

1 thumb-sized piece fresh ginger, peeled and minced

1/2 pound ground pork

2 tablespoons soy sauce

2 tablespoons oyster sauce

2 tablespoons water

2 teaspoons brown sugar

1 pound fresh green beans, ends trimmed and cut thinly on a bias

2 medium carrots, peeled and julienned

salt to taste

black pepper to taste

Directions

  1. Heat the vegetable oil in a large wok or skillet over medium heat until shimmering.

  2. Add the chopped onion, minced garlic, and minced ginger to the hot oil. Stir-fry until softened and fragrant, about 2 minutes.

  3. Add the ground pork to the pan. Using the back of a spoon, break the pork into small pieces while cooking until no pink remains and the pork has reached an internal temperature of 160°F, about 5-6 minutes. Drain excess oil from the pan if needed.

  4. In a small bowl, whisk together the soy sauce, oyster sauce, water, and brown sugar until the sugar dissolves completely.

  5. Pour the sauce mixture into the pan with the pork and stir to coat evenly. Continue cooking over medium heat until the sauce is slightly thickened, about 1-2 minutes.

  6. Increase the heat to high. Add the green beans and julienned carrots to the pan. Stir-fry continuously for 2-3 minutes until the vegetables are tender-crisp.

  7. Season the stir-fry with salt and a generous amount of black pepper to taste. Transfer to a serving dish and serve immediately while hot.
