Ingredients

1/2 cup freshly grated Parmigiano-Reggiano

2 tablespoons olive oil

2 teaspoons Calabrian chile paste

1 teaspoon lemon zest

1/4 teaspoon dried oregano

1/4 teaspoon salt

1 pound large shrimp, peeled and deveined, tails on

1/2 small lemon

Directions

  1. Preheat your oven to 425 degrees Fahrenheit.

  2. In a medium bowl, whisk together the grated Parmigiano-Reggiano, olive oil, Calabrian chile paste, lemon zest, dried oregano, and salt until well combined.

  3. Add the peeled and deveined shrimp to the bowl and toss gently until each shrimp is evenly coated with the cheese and spice mixture.

  4. Arrange the coated shrimp in a single layer on a rimmed baking sheet.

  5. Roast in the preheated oven for 8 to 10 minutes, until the shrimp are pink and opaque throughout and have reached an internal temperature of 145 degrees Fahrenheit.

  6. Remove from the oven and immediately squeeze the juice from the lemon half over the hot shrimp.

  7. Serve the shrimp warm.

Calabrian chile paste is the real friction here—none of the major Charlotte chains (Harris Teeter, Food Lion, Publix, Walmart, ALDI, Kroger) stock it reliably, so you're looking at a specialty run to a Mediterranean market or an online order. Shrimp, parmigiano-reggiano, lemon, and oregano are all standard and cheap at any major grocer, keeping the per-serving cost well under $3 once you have the paste on hand. The stated 20 minutes is honest for a pan dish, though it assumes shrimp are already thawed and you've zested your lemon ahead of time. This is a strong weeknight dinner for a family that eats fish, reheats unevenly (best eaten the same night, though cold shrimp leftovers work in a pasta the next day), and suits North Carolina's coastal access to good frozen shrimp.
