Ingredients
1 cup baking mix (such as Better Baking Mix)
1/2 cup brown sugar, packed
1 teaspoon ground cinnamon
1/3 cup raisins (optional)
1/4 cup vegetable oil
1 large egg
1/2 teaspoon vanilla extract
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Preheat your oven to 350°F. Lightly grease a baking sheet with cooking spray or oil.
In a large mixing bowl, combine the baking mix, brown sugar, ground cinnamon, and raisins if using. Mix the dry ingredients together until evenly distributed.
In a small separate bowl, whisk together the vegetable oil, egg, and vanilla extract with a fork until well blended.
Pour the wet ingredient mixture into the dry ingredients and stir with a spoon until just combined. The dough will be thick.
Using a tablespoon or small cookie scoop, measure level portions of dough and drop them onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges begin to turn light golden brown. Watch carefully to avoid overbaking.
Remove the baking sheet from the oven. While the cookies are still warm, carefully transfer them to a wire cooling rack or plate using a spatula.
