Ingredients
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup vegetable shortening
1/2 cup butter, at room temperature
1 1/4 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 teaspoons anise seeds
Directions
Preheat your oven to 375°F (190°C). In a small bowl, whisk together the flour and salt, then set aside.
In a large mixing bowl, cream together the softened butter and vegetable shortening until light and fluffy, about 2-3 minutes.
Gradually add the granulated sugar to the butter mixture while beating continuously until well combined and pale, about 2-3 minutes.
Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Then add the vanilla extract and mix until smooth.
Fold in the anise seeds, then gently fold in the flour mixture just until the dough comes together, being careful not to overmix.
Drop small spoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart. Lightly flatten each cookie with the back of a spoon.
Bake for 5-7 minutes until the edges are light golden brown but the centers remain soft. The cookies will continue to firm up as they cool.
Allow the wafers to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
