1 pound pizza dough
Cornmeal for dusting
1/3 cup sweet Thai chili sauce
2 cups grated mozzarella cheese
1 cup precooked grilled chicken, cubed
2/3 cup julienned carrot
1/2 red bell pepper, diced
2 green onions, chopped
1/4 cup chopped fresh cilantro
2 tablespoons all-natural peanut butter
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
2 tablespoons honey
1 teaspoon sesame oil
1/4 cup chopped roasted salted peanuts

Directions
Preheat your oven to 500°F (260°C).
Lightly dust a baking sheet with cornmeal and set aside.
Stretch and press the pizza dough onto the prepared baking sheet, forming an even layer.
Spread the sweet Thai chili sauce evenly over the pizza dough, leaving a small border for the crust. Sprinkle the grated mozzarella cheese over the sauce, then distribute the cooked chicken pieces evenly on top.
Bake the pizza for 8-10 minutes until the crust is golden brown and the cheese is melted and bubbly.
While the pizza bakes, prepare the peanut sauce by whisking together the peanut butter, soy sauce, rice wine vinegar, honey, and sesame oil in a small bowl until smooth and well combined. Season with salt and pepper to taste.
