Quick and flavorful sautéed mustard greens with garlic and a hint of fish sauce. This simple side dish complements chicken adobo beautifully while remaining light and nutritious.

Ingredients

2 tablespoons Canola oil

2 cloves Garlic cloves, crushed and peeled

2 bunches Mustard greens, rinsed, trimmed, and cut crosswise into 1-inch pieces

to taste Coarse salt

to taste Freshly ground black pepper

1 teaspoon Fish sauce

Directions

  1. Heat the canola oil in a large skillet over medium-high heat until shimmering, about 1 minute.

  2. Add the crushed garlic cloves and sauté for about 30 seconds until fragrant, stirring constantly to prevent browning.

  3. Add the cut mustard greens in batches, stirring to wilt them as they soften. This should take about 4–5 minutes total.

  4. Drizzle the fish sauce over the greens and toss well to distribute evenly.

  5. Season with coarse salt and freshly ground black pepper to taste. Cook for another 1–2 minutes until the greens are tender but still slightly firm.

  6. Transfer to a serving dish and serve immediately as a side to chicken adobo or other main dishes.
