Ingredients
8 to 9 oz crunchy granola bars, crushed
4 tablespoons butter, melted
3/4 cup sugar
3 tablespoons cornstarch
3/4 cup water
1/4 cup blackberry fusion gelatin powder
8 oz cream cheese, softened
1/4 cup powdered sugar
1 tablespoon milk
1 teaspoon vanilla extract
3 cups fresh mixed berries
Directions
Preheat oven to 350°F. Crush the granola bars into bite-sized pieces and place in a medium bowl. Add the melted butter and mix thoroughly until well combined. Press the mixture firmly and evenly into a greased 9-inch pie dish, covering the bottom and sides.
Bake the crust for 5 minutes until lightly set. Remove from oven and allow to cool completely.
In a small saucepan, whisk together the sugar and cornstarch. Gradually add the water, stirring until completely smooth. Place over medium heat and bring to a boil, then continue cooking and stirring for about 2 minutes until the mixture thickens noticeably.
Remove from heat and stir in the gelatin powder until completely dissolved. Set aside to cool to room temperature, then refrigerate for 15–20 minutes until the mixture reaches a syrupy consistency but is not fully set.
In a small bowl, combine the softened cream cheese, powdered sugar, milk, and vanilla extract. Beat or stir until smooth and creamy.
Spread the cream cheese mixture evenly over the cooled crust, creating an even layer.
Arrange the fresh mixed berries over the cream cheese layer, distributing them evenly across the pie.
Carefully spoon the gelatin mixture over the berries, allowing it to coat them and flow into the spaces between. Refrigerate the pie until the gelatin is completely set, about 2–3 hours, before serving.
