Ingredients

2 tablespoons olive oil

1 tablespoon unsalted butter

1 pound ground beef

1 small brown onion, finely chopped

4 garlic cloves, minced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon sweet paprika

1 teaspoon dried thyme

1 tablespoon dried oregano

1/4 teaspoon ground cinnamon

1/4 cup red wine

5 ounces tomato paste

1 cup orzo pasta

4 cups chicken broth

1 bay leaf

2 tablespoons chopped fresh parsley

1 tablespoon lemon juice

2 ounces grated parmesan cheese

Crushed red pepper flakes, for serving

Directions

  1. Heat olive oil and butter in a large pot over medium-high heat. Add the chopped onion and cook for 2–3 minutes until softened and fragrant.

  2. Add minced garlic and cook for 30 seconds until aromatic. Add ground beef and cook, breaking it up with a spoon, until browned and cooked through (165°F internal temperature), about 5–7 minutes.

  3. Stir in salt, black pepper, paprika, thyme, oregano, and cinnamon. Cook for 30 seconds to bloom the spices.

  4. Pour in the red wine (if using) and scrape up any browned bits from the bottom of the pot. Simmer for 1 minute to reduce slightly.

  5. Add tomato paste and stir well to combine with the beef mixture. Cook for 1 minute.

  6. Pour in the chicken broth and add the bay leaf. Bring to a boil.

  7. Add the orzo and stir to distribute evenly. Return to a simmer and cook uncovered for 10–12 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed. Remove the bay leaf.

  8. Remove from heat and stir in the fresh parsley and lemon juice. Taste and adjust seasoning as needed.

  9. Divide among four bowls. Top each serving with grated parmesan cheese and a pinch of crushed red pepper flakes.
