Ingredients
2 head broccoli heads, chopped into small florets
1 lb ground chicken
3½ tbsp green curry paste
2½ tbsp fish sauce
1 bunch fresh basil, leaves picked and torn if large
2 tbsp neutral oil for cooking
Directions
Heat 1 tablespoon of oil in a wok or large frying pan over high heat until very hot and shimmering.
Add the chopped broccoli florets to the hot pan and stir-fry for 4-5 minutes, stirring frequently, until the broccoli is bright green and tender-crisp but still maintains some bite.
Transfer the cooked broccoli to a plate and set aside.
Add the remaining 1 tablespoon of oil to the same pan over high heat. Once hot, add the ground chicken and stir-fry, breaking it into small pieces, until it is cooked through with no pink remaining (about 5-7 minutes, reaching an internal temperature of 165°F).
Return the broccoli to the pan along with the green curry paste and fish sauce. Stir well to combine all ingredients evenly and cook for another 2-3 minutes until everything is heated through and the flavors are melded.
Remove from heat. Taste the stir-fry and adjust the seasoning by adding more fish sauce or curry paste to your preference.
Divide among serving bowls or plates and scatter the fresh basil leaves over the top before serving.
Comments
Green curry paste and fish sauce both require a special trip to an Asian market or specialty section—Harris Teeter's international aisle may stock curry paste, but fish sauce is less reliable and you'd likely need to stop at an ethnic grocer for both. The basil here almost certainly means Thai basil, not the Italian supermarket kind, another specialty hunt. A weeknight stir-fry lives on ingredient availability, and this one demands planning. The dish itself is quick and cheap once ingredients are on hand—chicken, broccoli, and oil keep costs low—and it reheats well, but the upfront sourcing cost and the assumption that 30 minutes includes buying two specialty items makes this a weekend or planned-ahead meal, not a grab-and-go choice.
