Ingredients
1½ pounds tomatillos, husks and stems removed
1½ whole jalapeño or serrano peppers, stems and seeds removed
1 whole small white onion, skin removed and halved
1 bunch fresh cilantro, leaves and tender stems
kosher salt, to taste
Directions
Place the cleaned tomatillos, jalapeño peppers, and onion halves on a baking sheet or grill rack. Broil or grill over medium-high heat for 4 to 5 minutes, stirring occasionally, until the tomatillos are softened and lightly charred on the surface.
Transfer the roasted tomatillos, peppers, and onion to a blender or food processor.
Add the fresh cilantro leaves and tender stems to the blender.
Blend on high speed until you reach your desired consistency—smooth for a refined salsa or slightly chunky for a rustic texture.
Season with kosher salt to taste and stir well to combine.
Allow the salsa to cool to room temperature before serving, or serve warm if preferred.
