Ingredients

1/3 cup non-fat dry milk

2 cups all-purpose flour

1 teaspoon baking soda

2 1/2 teaspoons ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground allspice

1/2 teaspoon ground nutmeg

1/3 cup vegetable oil

2/3 cup honey

1/2 cup fresh orange juice

2 tablespoons grated orange peel

2 large eggs

1 cup mashed pumpkin

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Preheat your oven to 350°F. Lightly grease or coat a 12x15 inch baking pan with non-stick spray, making sure to coat the bottom and all sides evenly.

  3. In a small mixing bowl, whisk together the non-fat dry milk, all-purpose flour, baking soda, cinnamon, cloves, allspice, and nutmeg until well combined.

  4. In a large mixing bowl, vigorously blend the vegetable oil, honey, orange juice, grated orange peel, eggs, and mashed pumpkin together until fully incorporated and smooth.

  5. Slowly pour the dry ingredient mixture into the wet pumpkin mixture, stirring continuously until just combined and the batter is smooth with no lumps remaining.

  6. Pour the batter into the prepared baking pan and spread it evenly across the entire surface.

  7. Bake in the preheated 350°F oven for 15 to 20 minutes. The bars are done when the top is golden brown and the cake springs back immediately when lightly pressed with your finger.

  8. Remove the pan from the oven and allow the bars to cool completely in the pan before cutting.

  9. Once cooled, cut the pumpkin cake into 30 equal squares and serve.
