Ingredients

2 cups Raw macadamia nuts

1 teaspoon Kosher salt

1 tablespoon Fresh lemon juice

½ cup Water

Directions

  1. Add the raw macadamia nuts to a food processor.

  2. Process the nuts for 2–3 minutes, scraping down the sides as needed, until they release their natural oils and begin to form a smooth, creamy paste.

  3. Add the kosher salt and fresh lemon juice to the processor.

  4. Pour in the water and continue processing for another 1–2 minutes, pulsing as needed, until you reach a ricotta-like consistency with a light, fluffy texture.

  5. Transfer to a serving dish and enjoy immediately, or store in an airtight container in the refrigerator for up to 5 days.
