Ingredients
2 cups Raw macadamia nuts
1 teaspoon Kosher salt
1 tablespoon Fresh lemon juice
½ cup Water
Directions
Add the raw macadamia nuts to a food processor.
Process the nuts for 2–3 minutes, scraping down the sides as needed, until they release their natural oils and begin to form a smooth, creamy paste.
Add the kosher salt and fresh lemon juice to the processor.
Pour in the water and continue processing for another 1–2 minutes, pulsing as needed, until you reach a ricotta-like consistency with a light, fluffy texture.
Transfer to a serving dish and enjoy immediately, or store in an airtight container in the refrigerator for up to 5 days.
