Ingredients
6 Bread slices (brown bread or your choice)
1 cup Cheddar or mozzarella cheese, grated
1 Green chilies, finely chopped
2 tablespoon Fresh cilantro, finely chopped
¼ cup Green onions, finely chopped
¼ cup Red onion or yellow onion, finely chopped
¼ cup Green bell pepper, finely chopped
¼ cup Red bell pepper, finely chopped
Black pepper powder, to taste
Salt, to taste
Directions
Preheat your oven to 400°F (200°C) for at least 10 minutes. Line a baking sheet with aluminum foil.
Arrange the 6 bread slices on the prepared baking sheet and bake for 7–8 minutes until they are lightly toasted and turn light brown. Remove from the oven and set aside.
In a mixing bowl, combine the grated cheese, chopped green chilies, cilantro, green onions, red or yellow onion, green bell pepper, and red bell pepper. Season with salt and black pepper to taste and mix well until all ingredients are evenly distributed.
Spread the cheese and vegetable mixture evenly on each toasted bread slice, distributing it as a thick layer.
Return the topped bread slices to the oven and bake for another 7–8 minutes, until the cheese is melted and bubbly and the bread edges become crispy and golden brown.
Remove from the oven and let cool for 1–2 minutes. Cut each slice into triangles or your desired shape using a sharp knife and serve warm.
Comments
This is a straight-ahead weeknight toast that leans on pantry staples and common produce all available at Harris Teeter, Food Lion, Walmart, or ALDI without a special trip. The ingredient list drives the cost down—bread, cheese, peppers, and onions run about $1.25 to $1.50 per serving, and green chilis (fresh or canned, both standard) are cheap year-round in North Carolina. The stated 23 minutes is honest if you're melting cheese under a broiler, though assembly and toasting will run closer to 15 minutes in real time. The dish suits a quick lunch or light dinner for three, reheats unevenly (the bread softens), so plan to eat it fresh or accept that leftovers are better crumbled into a grain bowl the next day. Cilantro and green onion are nice touches that elevate a simple dish without fussiness.
