Ingredients
1 cup unsalted butter, room temperature
1 cup granulated sugar
1 cup brown sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup unsweetened dark cocoa powder
2 teaspoons baking soda
1 teaspoon salt
1 cup white chocolate chips
12 snack-size cookies and cream chocolate bars, roughly chopped
Directions
In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2 to 3 minutes.
Add the eggs and vanilla extract to the butter mixture and blend until fully combined, scraping down the bowl as needed to ensure all ingredients are incorporated.
In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until evenly distributed.
Gradually add the dry ingredient mixture to the wet ingredients, stirring on low speed until just combined and no flour streaks remain.
Fold in the white chocolate chips by hand or with the mixer on the lowest setting until evenly distributed throughout the dough.
Preheat your oven to 350°F. Line baking sheets with parchment paper.
Using a 1½ tablespoon cookie scoop or similar measuring tool, drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Press a few pieces of the chopped cookies and cream candy bars onto the top of each dough ball.
Bake at 350°F for 9 to 10 minutes, until the edges are set but the centers still appear slightly underdone.
Remove the baking sheets from the oven and allow the cookies to rest on the hot pan for 3 to 5 minutes to firm up slightly.
Transfer the cooled cookies to a wire cooling rack and allow them to cool completely.
Once fully cooled, store the cookies in an airtight container at room temperature.
