Cajun-Spiced Burgers

Ingredients
1½ pounds Ground beef (80 percent lean)
2 teaspoons Cajun seasoning
3 Scallions, sliced (white and green parts)
½ cup Mayonnaise
2 teaspoons Dijon mustard
1 teaspoon Hot sauce
¼ cup Fresh flat-leaf parsley, chopped
½ cup Celery stalk, finely chopped
1 medium Yellow onion, sliced into 1/4-inch rounds
1 medium Green bell pepper, sliced into 1/4-inch rings
1 tablespoon Vegetable oil
4 Sesame seed hamburger buns, split
Directions
Prepare a grill or grill pan and preheat to medium-high heat.
In a large bowl, gently combine the ground beef, Cajun seasoning, and sliced scallions, being careful not to overwork the meat. Divide the mixture into four equal portions and shape each into a 1/2-inch-thick patty.
In a small bowl, whisk together the mayonnaise, Dijon mustard, hot sauce, chopped parsley, and finely chopped celery to make the remoulade. Cover and refrigerate until ready to use.
Place the beef patties on the grill and cook for about 4 minutes on the first side without moving them. Flip once and cook for another 4 minutes for medium doneness (internal temperature of 160°F). While the burgers are cooking, brush the onion slices and bell pepper rings lightly with vegetable oil, then place them on the grill. Cook for about 5 minutes total, turning occasionally, until they are lightly charred and tender.
Toast the split hamburger buns on the grill, cut-side down, for about 1 minute until lightly golden. Spread the remoulade evenly on both the top and bottom of each bun. Place a cooked patty on the bottom bun, top with some of the grilled onion and bell pepper, then cap with the top bun. Serve immediately.
