German Chocolate Butter Cookie Cake

Ingredients
18 ounces (3 cups) chopped bittersweet chocolate, 65% cocoa
3 tablespoons coconut oil
3/4 cup plus 1 tablespoon heavy cream, room temperature
1/4 teaspoon kosher salt
5 ounces thin butter cookies, preferably Leibniz Butterkeks or Petit Beurre (about 36 cookies)
Directions
Combine the chopped bittersweet chocolate and coconut oil in a heat-safe bowl. Create a water bath by placing the bowl over a pot of gently simmering water (the bowl should not touch the water). Stir occasionally until the chocolate and coconut oil are completely melted and smooth. Remove from heat and let cool for 2–3 minutes.
Pour the heavy cream into the warm chocolate mixture and stir until fully combined and silky. Add the kosher salt and mix until even.
Line an 8-inch round cake pan or springform pan with plastic wrap or parchment paper. Arrange a single layer of butter cookies on the bottom, fitting them snugly together.
Spread about 1/3 of the chocolate ganache evenly over the first layer of cookies using an offset spatula or the back of a spoon.
Add another layer of butter cookies, pressing them gently into the ganache. Spread another 1/3 of the ganache on top.
Repeat with a final layer of cookies and the remaining ganache on top. Make sure the ganache fully covers and seals the top.
Cover the cake loosely with plastic wrap and refrigerate for at least 5 hours, or until the ganache is fully set and the cake is firm enough to slice cleanly.
Remove the cake from the pan using the plastic wrap edges to help lift it out. Peel away the wrap. Use a warm, wet knife to slice into 10 portions, wiping the blade clean between cuts for neat slices. Serve chilled.
